Summer Recipes and a Love for Nutrition: A Delicious Way to Enjoy Summer

It’s almost that time of year when the need to relax and cool down is here! Utilize these refreshing and delicious recipes provided by Chef Janet Lee! Social life almost always is surrounded by food! Food brings people together. We meet with friends and family for a meal, for connection. And that desire and passion for food can turn into something more! People utilize nutrition in their careers all the time! After exploring these delectable recipes, check out some of SWIHA’s Nutrition programs. Have the courage to pursue your passions this summer. 

  1. Mega Salsa
    Chop, and mix all of the following ingredients in the ratio you desire. This recipe is easy to make, great for summer gatherings, and stores well for up to a week. Serve with tortilla chips, raw crackers or roll inside a tortilla.
  • Avocado
  • Beans of choice
  • Organic corn
  • Onion – any kind
  • Tomato
  • Jalapeno
  • Cilantro
  • Salt
  • Peppers
  • Lime juice
  • Garlic salt

 

  1. Pina Colada Smoothie
  • 3 cups chopped frozen pineapple
  • ¾ cup light coconut milk, canned or boxed
  • ½ of a banana
  • 1 scoop protein powder, optional
  • 1 tsp. vanilla
  • Add water if needed to blend
    • Place all ingredients in a high-speed blender.
    • Top with pineapple wedge, coconut whip cream, or mint.

  • This program has been specially designed to teach and inspire students who are passionate about preparing and sharing healthy meals.
